New York City is undergoing a bakery renaissance, and Librae Bakery is one of the spots leading the way. It’s owned by Dona Murad, a Bahraini entrepreneur with a flare for Middle Eastern flavors and student of Danish baking techniques. The result? Expertly crafted treats with fascinating twists i.e lumee babka buns and za’atar labneh morning buns.
I’m skeptical of mega #trendy NYC spots. They’re often are all hype no flavor. I’m convinced influencers feel pressured to say it’s amazing because 1. They waited in line. 2. They spent way too much money. 3. Because they want those views and likes.
I decided to find out for myself.
Librae Bakery is cute and cozy with a clean-cut industrial-chic interior design. There are just a handful of tables of available in the front to make room for the massive bakery in the back. You know what that means? Amazing aromas and guaranteed freshness.
The social media all star of Librae Bakery is the pistachio rose croissant. Upon arrival, we were informed it’d be ready in 20 minutes. We took a lap around Cooper Square, and were informed that it’d be another 20 minutes. Patience isn’t my forte, but we grabbed a ginger and white chocolate bun to pass the time.
My heart sank during the cut open– it looked bland and dry. One bite proved otherwise. The bun was ultra-moist with a subtle, warm ginger flavor. White chocolate softened the edges of the ginger’s bite, making for a finger licking amazing treat.
Finally, I spied the rose pistachio croissants being put out. Would it be worth the hype?
One bite and I was in heaven. The croissant was beautifully flakey and buttery, and the pistachio paste had a deep, sophisticated pistachio flavor. While I think I’d sound like like a cool food blogger if I said, “The rose brought light floral notes to each bite, adding a nuanced freshness.” I can’t say I tasted the rose.
I THINK the ginger and white chocolate bun was around $5. I KNOW that the rose pistachio croissant was $8. And I’m here to report that I think it was worth the lofty price tag. The products are truly superior with well developed flavors and refined baking techniques.
